The Scoville Scale is a way to rate the amount of capsaicin in peppers. It was developed by Wilbur Scoville in 1912. He soaked peppers in alcohol to extract the capsaicin. Then he added pre-sweetened water to dilute the extract so it was barely able to be tasted by the tongue. The amount of water it took to dilute the extract became Scoville Units.

Below is a chart with some common peppers to show the hotness of each pepper. Bhut Jolokia is at the top of the edible peppers, more than three times hotter than habanero peppers. Bhut Jolokia is acknowleged by the Guiness Book of Records as the hottest pepper in the world.

There is a new hottest pepper in the world!

In April 2011, the Guiness Book of Records crowned a new hottest pepper in the world. The new hottest chile pepper is the Trinidad Scorpion pepper. This new hottest pepper was measured as hot as 1,463,700 Scoville Units. The Trinidad Scorpion Butch T strain pepper that won the hottest pepper in the world was grown in Australia.
